This recipe has been a hit both times i have made it now so i hope you enjoy :) The meal is broken down into 3 Dishes.. 1) Slowcooked pulled chicken 2) Corn Salsa and 3) Cilantro-LIme Rice

Corn Salsa

Ingredients (pictured above)

half a bundle of cilantro

1 jalapeno

1 cup Lime juice

2 cans of crisp corn

Salt & Pepper

I drained and rinsed the corn, lightly chopped the cilantro, and finely chopped the jalapeno(i chopped after i de-seeded the jalapeno) then i combined all ingredients in a bowl and chilled for 2 hours. EASY!


Slow-Cooked Pulled Chicken

Ingredients (pictured above)

2.5 lbs of chicken break or thigh

6 oz of water

6 oz Vegetable stock

6 oz white wine

salt & pepper

garlic salt

seeded jalapeno

I roughly chopped the jalapeno and combined all items into my slow cooker.  l let these flavors infuse and simmer for 6-8 hours and the chicken totally fell apart into a pulled chicken. EASY! not only did i not have to pull the chicken myself but i litterally combined ingredients and let them be for hours... thats what im talking about simple meal!


Cilantro-Lime Rice

Ingredients (pictured above)

half a bundle of cilantro

2 cups of lime juice

2 bags of rice

Salt & Pepper

I cooked rice following the directions on the bag However, I substituted 2 cups of water for 2 cups of Lime juice. When the rice was fully cooked I salt and peppered to my liking and lastly I mixed together the roughly chopped cilantro. EASY!


INGREDIENTS: Slow-cooked pulled chicken, Cilantro-Lime Rice, Corn Salsa, Shredded cheese, & Sour Cream

I layed down a foundation of our seasoned Cilantro-Lime rice, then I added a layer of the slow-cooked chicken, For a final layer I spooned the corn salsa making a mini masterpiece. But this wasn't complete until we topped it off with sour cream and shredded Cheese.. BOOM!

As I have been browsing the mall lately here are a few thing that I have had my eye out for. I have been dying to find a cute new pair of booties and a fun new sneaker. There are a few I have in mind but I'm pretty much looking for something that resembles these. There is also one trend that I have caught myself buying a lot of lately & that is Sequins, and this sequin jacket looks killer!!! NOW let me recommend to you that if you don't already have a cross body purse then you should definitely pick one up. I have recently been gifted one and I cant find enough places to wear it, now only if it was bigger! **hint hint CHRISTmas gift** :) So as far as these tops go I think they are a pieces to mix and match together with the different shoes and even Sequin jacket. Now if you don't really know me then here is one big tip to my shopping success... BUY VERSATILE PRODUCTS.. let me repeat.. VERSATILE PRODUCTS!!!! Until Next Time xoxox

Leftovers + Cheese = For Me :)

So on my previous post I shared my delicious Chicken Parmesan recipe (that i hope you enjoyed making as much as you did reading). But the problem I faced was WHAT TO DO WITH THE LEFT OVERS?? nobody likes eating the same thing two days in a row so i tried to put a lil spin on the chicken parm. After a long day i found myself exploring the new to me Greenwise Publix and stumbled upon their delicious cheese section (anything with cheese will please me!!!). I decided to concoct my own Sauce for a Chicken Parm Pasta & it went a little like this....


CHiCKEN PARMESAN (directions in previous post)

12oz of Asiago

2 cups of whole milk

1/4 cup of butter

1 cup of chopped broccoli

Salt & pepper to liking

Penne pasta


I first started by boiling the water for my pasta and of course salting it because this is the only time you can flavor your pasta. I then grated the Asiago and added to medium sized pot along with the butter. I adjusted the head to medium low, just enough to melt and heat my ingredients but not quite boil them. I added the milk salt and pepper and wahhlahhh Sauce complete! I then threw the pre-made chicken parmesan into the skillet for a quick heat up. I set up an additional pot for my broccoli which I quick steamed for about 5 minutes with just a splash or two of water and I salted and pepperd to my liking. At this time my water has boiled and I added the pasta. About 5 minutes later my chicken was warmed and I cut it into bite sized pieces, I drained my pasta and combined pasta chicken broccoli and sauce! The cook time was just less than 20 minutes and was even more delicious then the night before! Thanks for reading..


Chicken Parmesan Made Easy

This was such an easy recipe i just had to share!


2 cups of oil

4 chicken breast

2 eggs

Italian bread crumbs about 2 cups

Flour about 1 1/2 cups to 2 cups

grated parmesan about 1 to 1 1/2 cups

salt & pepper to your liking

and I also used my own house blend of some of my favorite seasoning.. BUT NOT NECESSARY!


I first added the two cups of oil in a large skillet and set heat to medium high. While heating I started with the chicken breast and pounded it to 1/2 in thin (to make frying time shorter) and salt and peppered the chicken to desired preference. I then wisked together the eggs and a splash of water, in a medium sized bowl, for an egg bath to keep the crust in contact with the meat. I set up my dry seasoning in a large bowl and gently stirred them together.  When the oil began to gently boil I quickly immersed the chicken into the egg bath and then layed the chicken into the dry rub and flipped it over so that both sides are covered. **You can repeat the egg wash and dry seasoning process if you like.** I carefully dropped the parmesan, flour, bread crumb covered chicken into the oil and let simmer for about 8 to 10 minutes or until a crispy golden brown and flipped the chicken over to create the same crispy golden crust on the other side. I then repeated this process for the remaining 3 pieces of chicken! This turned out absolutely delicious! I hope you enjoy as much as i did! :)

Something Sexy, Something Smooth, Something Gold and Something New!

These are a few of new favorites this fall. Big watches are a must have and add a classy statement to any fit, Not to mention how versatile they are! & about the booties --> this style of boot is popping up everywhere this season and I think would go great with new favorite brand of Jeans. I have to admit I have gone a little jean crazy with this brand but I have yet to find a style that doesn't fit my curves to my exact liking! :) Last but not least my guilty pleasures... I started using a similar Argan Oil that I picked up at my local Salon and I just had to share how smooth and sexy my hair feels and smells, reminds me of a Moroccan paradise in a bottle! Bobbi Brown really knows how to lay one on your lips & i have found these shades irresistible! Hope you enjoy xoxo until next time :)
