This recipe has been a hit both times i have made it now so i hope you enjoy :) The meal is broken down into 3 Dishes.. 1) Slowcooked pulled chicken 2) Corn Salsa and 3) Cilantro-LIme Rice
Corn Salsa
Ingredients (pictured above)
half a bundle of cilantro
1 jalapeno
1 cup Lime juice
2 cans of crisp corn
Salt & Pepper
I drained and rinsed the corn, lightly chopped the cilantro, and finely chopped the jalapeno(i chopped after i de-seeded the jalapeno) then i combined all ingredients in a bowl and chilled for 2 hours. EASY!
Slow-Cooked Pulled Chicken
Ingredients (pictured above)
2.5 lbs of chicken break or thigh
6 oz of water
6 oz Vegetable stock
6 oz white wine
salt & pepper
garlic salt
seeded jalapeno
I roughly chopped the jalapeno and combined all items into my slow cooker. l let these flavors infuse and simmer for 6-8 hours and the chicken totally fell apart into a pulled chicken. EASY! not only did i not have to pull the chicken myself but i litterally combined ingredients and let them be for hours... thats what im talking about simple meal!
Cilantro-Lime Rice
Ingredients (pictured above)
half a bundle of cilantro
2 cups of lime juice
2 bags of rice
Salt & Pepper
I cooked rice following the directions on the bag However, I substituted 2 cups of water for 2 cups of Lime juice. When the rice was fully cooked I salt and peppered to my liking and lastly I mixed together the roughly chopped cilantro. EASY!
NOW, PILE IT UP!
INGREDIENTS: Slow-cooked pulled chicken, Cilantro-Lime Rice, Corn Salsa, Shredded cheese, & Sour Cream
I layed down a foundation of our seasoned Cilantro-Lime rice, then I added a layer of the slow-cooked chicken, For a final layer I spooned the corn salsa making a mini masterpiece. But this wasn't complete until we topped it off with sour cream and shredded Cheese.. BOOM!
